Slice of oat-banana breakfast cake topped with cherry yogurt, banana and fresh cherries

Ingredients

  • 1/2 ripe banana
  • 1 egg
  • 40 g (3 tbsp) Greek yogurt
  • 30 g (1/3 cup) rolled oats
  • 20 g (2 tbsp) oat flour
  • 30 ml (2 tbsp) milk
  • 1/4 tsp baking powder
  • 60 g (about 1/2 cup) cherries
  • 100 g (about 1/2 cup) Greek yogurt, for topping
  • 1/2 ripe banana, for topping

Instructions

  1. Mash half the banana with a fork and mix with the egg, yogurt, oats, oat flour, baking powder, and milk.
  2. Pour into a baking dish and bake at 180 C (350 F) for about 30 minutes, until set.
  3. Mash the remaining banana with the yogurt and spread over the top. Serve with cherries.

Tips

  • Use a very ripe banana for the sweetest flavor and the softest cake texture.
  • Let the cake cool slightly before spreading the topping, so the yogurt stays cool and creamy.
  • Add the cherries just before serving to keep them bright and fresh. For more healthy breakfast ideas, see Allrecipes.
