Ingredients
- 900 g (2 lb) chicken thigh fillets
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1-2 bell peppers, chunked
- Salt, pepper, chicken seasoning, and dried garlic to taste
- Wooden skewers, soaked
Instructions
- Cut the chicken into chunks and marinate with soy sauce, oil, salt, pepper, seasoning, and dried garlic for at least 30 minutes.
- Thread onto skewers, alternating with bell pepper chunks.
- Bake at 180-200C (350-400F) for 20-25 minutes.
- Brush with the pan juices and return to the oven for 10 more minutes until nicely browned.
Tips
- Soak the wooden skewers in water for at least 30 minutes so they do not burn in the oven.
- Do not crowd the skewers on the tray — space lets hot air circulate for even browning.
- Brush with the pan juices halfway through for extra-juicy, caramelized edges.
