These potato baskets with creamy chicken turn simple mashed potatoes into crisp little cups filled with a rich, garlicky chicken and cream sauce. They are a fun, family-friendly dinner that pairs the comfort of our Chicken and Mashed Potato Bake with the one-pan ease of our Baked Chicken Drumsticks with Rice and Vegetables.

Ingredients
- 5 potatoes
- Fresh dill, chopped
- 250 ml (1 cup) heavy cream (33%)
- 1 onion, chopped
- 1 garlic clove, minced
- Salt and black pepper to taste
- 1 chicken breast, diced
- 50 g (1.7 oz) cheese, grated
Instructions
- Sear the chicken, add the onion until translucent, then the garlic. Cook 1 minute, pour in the cream, season with salt and pepper, and heat 1 more minute.
- Boil the potatoes, salt them, add dill, and mash. Let cool slightly, then shape into baskets.
- Fill each basket with grated cheese, then the chicken mixture, and top with more cheese.
- Bake at 180C (350F) until golden and bubbly.
Tips
- Let the mashed potatoes cool slightly before shaping so the baskets hold their form in the oven.
- Press a little grated cheese firmly into the base of each basket — it melts into a delicious glue that keeps the filling in place.
- For safe chicken handling temperatures and timings, check the food-safety resources at USDA.gov before you start.
