Ingredients
- 400 g (14 oz) chicken breast
- Salt, black pepper, and garlic, to taste
- 3 eggs
- 50 g (1/3 cup + 1 tbsp) all-purpose flour
- 100 g (1 cup) breadcrumbs
- Vegetable oil, for frying
Instructions
- Wash the chicken fillets and pat dry with paper towels. Slice lengthwise into cutlets.
- Cover with plastic wrap and pound flat. Season with salt and pepper.
- Set up three plates: beat the eggs with salt (grate in garlic if you like) in the first; salted flour in the second; breadcrumbs in the third.
- Dredge each cutlet in flour, then egg, then breadcrumbs.
- Fry in hot oil 3 minutes per side until golden.
Tips
- Pat the chicken very dry before breading — the coating sticks much better to dry meat.
- Keep the oil at a steady medium-high heat; if it’s too cool, the schnitzels absorb grease instead of crisping.
- Rest the fried schnitzels on a wire rack, not paper towels, to keep the crust crisp all around.
