These fluffy ricotta cheese pancakes are golden, soft and wonderfully light. Made with creamy ricotta and a touch of vanilla, they fry up tender inside and crisp at the edges — perfect with jam for a cozy, high-protein breakfast.

Ingredients
- 250 g (1 cup) ricotta cheese
- 80 g (2/3 cup) all-purpose flour, plus more for dusting
- 1 egg
- Sugar or sweetener to taste
- Vanilla sugar (optional)
- Jam of your choice, for serving
Instructions
- Mix all the ingredients into a soft dough. Lightly flour your work surface and shape into patties about 70 g (2.5 oz) each — a round glass works well as a mold.
- Fry the pancakes covered over low heat on both sides until golden. Serve warm with jam.
Tips
- Keep the heat low and the pan covered so the pancakes cook through without burning.
- Dust your hands and work surface with flour to shape sticky dough easily.
- Serve warm with jam, fresh berries or a dusting of powdered sugar.
