This turkey, mushroom and cottage cheese bake is a cozy, high-protein dinner that comes together in one dish, with tender turkey, earthy mushrooms, and a golden cheesy top. It is perfect for busy weeknights, and it pairs beautifully with fresh vegetables, much like our cabbage steaks with marinated chicken and high-protein tuna pasta bake.

Ingredients
- 150 g (5 oz) turkey breast fillet
- 100 g (3.5 oz) honey mushrooms (frozen works)
- 150 g (5 oz) grainy cottage cheese (4%)
- 80 g (3 oz) tomatoes
- 1 egg
- 20 g (0.7 oz) hard cheese, grated
- 200 g (7 oz) fresh vegetables (serve separately)
Instructions
- In a baking dish combine the turkey with the mushrooms, chopped tomatoes, egg and cottage cheese. Mix, top with grated cheese.
- Bake 20 minutes at 190°C (375°F). Serve with fresh vegetables.
Tips
- Cut the turkey into small, even pieces so it cooks through in just 20 minutes.
- If using frozen mushrooms, thaw and drain them well so the bake stays firm rather than watery.
