Finished sesame cookies served on a plate

Ingredients

  • 1 egg white
  • 2 tbsp honey
  • 150 g (1 cup) sesame seeds

Instructions

  1. Stir the egg white with the honey until smooth. If the honey is not runny, warm it slightly first. Add the sesame seeds and mix well.
  2. Drop spoonfuls of the mixture onto a parchment-lined baking sheet and shape into cookies. Make them a little thick so they do not stick to the parchment.
  3. Bake at 160°C (320°F) for 7 minutes until lightly golden.

Tips

  • Make the cookies a little thick so they do not stick to the parchment.
  • If the honey is not runny, warm it slightly before mixing — it blends much more easily.
  • Watch the cookies closely in the last minute: sesame goes from golden to burnt fast — more cookie science lives at Serious Eats.
