These fluffy kefir pancakes are soft, golden, and pillowy inside. Made with tangy kefir and a rested batter, they are perfect with berries and honey for a cozy breakfast.

Ingredients
- 1 egg
- 2 tbsp sugar
- Pinch of salt
- 250 g (1 cup) kefir (2.5%+)
- 240 g (2 cups) flour, sifted
- 1 tsp baking soda
- Vegetable oil for frying
Instructions
- Whisk the egg with sugar and salt. Warm the kefir in the microwave (do not boil) and stir into the eggs. Gradually add the sifted flour, mixing out all lumps.
- The batter should be quite thick. Quench the soda with vinegar and stir in immediately. Rest 10-15 minutes, then do not stir again.
- Heat an oiled skillet. With a water-dipped spoon, drop round pancakes and fry over moderate heat until golden on both sides.
Tips
- Warm the kefir gently and never boil it or the pancakes will lose their fluff.
- Do not stir the batter after resting or they will fall flat.
- Fry over moderate heat so they cook through without burning.
