Craving a Snickers but want to keep things light? These healthy Snickers-style protein bars deliver all the peanut-chocolate magic with a high-protein twist. Made with toasted milk powder, roasted peanuts and a sugar-free chocolate glaze, they are a no-bake treat you can feel good about — much like our no-bake chocolate mousse cake.

Ingredients
- 150 g (1 cup) roasted peanuts
- 50 g (1/3 cup) skimmed milk powder
- 20 ml (4 tsp) water
- 30 ml (2 tbsp) Jerusalem artichoke syrup or honey
- Sugar substitute, to taste
- For the glaze:
- 74 g (2.6 oz) sugar-free chocolate
- 30 ml (2 tbsp) milk (1.8%)
Instructions
- Toast the skimmed milk powder in a dry skillet until golden, stirring constantly (it will clump — that is normal).
- Transfer the toasted milk powder to a blender and grind to a flour-like powder.
- Grind 100 g of the peanuts into fine crumbs, then mix with the milk powder, the remaining 50 g whole peanuts, the syrup, and sugar substitute. Add a little water if the mixture crumbles.
- Shape into bars and freeze for 10 minutes.
- Melt the chocolate with the milk in the microwave and dip each bar in the glaze.
- Refrigerate until the chocolate sets.
Tips
- Toast the milk powder patiently — it clumps before it turns golden, so keep stirring and don’t walk away from the skillet.
- If the mixture feels crumbly, add water a teaspoon at a time until it holds together when pressed.
- Dip the frozen bars quickly so the chocolate sets in a thin, even shell; for an extra-thick coating, dip them twice. Fans of chocolate treats should also try our fudgy chocolate brownies with nuts.
